 Chef's Tip's
- Using good quality natural and organic fish, meat and vegetables will give the best possible flavours to your dishes.
- Most vegetables and some meats and fish will release water and juices when cooked, be sparing with the amount of water you add to the spice mixes to allow for this extra liquid and infusion of flavour.
- Cut score marks into chicken or meat pieces, this will allow far greater penetration of the spices and enhance the flavour.
- If you have the time marinade meats and vegetables over night in the refrigerator.
- Cook larger quantities of food than you need and freeze it to keep as your own instant "takeaway"!
- Pompadoms are great deep fried but can be produced in the micro wave, just lightly brush both sides with a little oil and then cook on maximum setting for approx 50 seconds. (Microwaves differ so a little trial and error is necessary to achieve best results.)
- Fresh Coriander finely chopped can be introduced to many dishes if you enjoy the taste.
- Sliced peppers, chillies or a sprig of coriander or mint placed on top of the final dish will give your presentation a professional look.
